Preservation and artisan molds: what makes a real spit cake

Long preservation, without any preservatives

The first distinctive feature of a traditional spit cake is that it can be stored for several months at room temperature. No refrigeration, no sophisticated airtight packaging, no preservatives or chemical additives.

This longevity is no accident or miracle. It is a direct result of the quality of the baking and the ingredients. Flame baking caramelizes the surface of the cake and seals the moisture inside the dough. The ingredients—fresh eggs, flour, butter, sugar—used in balanced quantities create a stable structure that withstands time.

This is one of the reasons why spit cake was traditionally prepared for big family celebrations: it could be made in advance, transported, stored, and remained excellent for several weeks, or even months, after its preparation.

How to properly store your spit cake

To fully enjoy this natural longevity, here are a few simple rules:

Keep the cake away from humidity. Humidity is the main enemy of a spit cake. It softens the crust, degrades the texture, and promotes mold. Store it in a dry place.

Do not put in the refrigerator. Cold dries out the dough and alters its texture. Room temperature storage is more than sufficient for several months.

Keep away from direct heat sources. No direct sunlight, no proximity to the oven, radiator, or cooktops.

For very long preservation, freezing is possible. Properly wrapped, a spit cake can be frozen for over a year without losing its qualities. Thaw slowly at room temperature.

The mold, an artisanal tool in its own right

If baking is the soul of the spit cake, the mold is its skeleton. The traditional mold has nothing to do with a classic baking pan. It is a crafted stainless steel piece, specifically shaped for this baking method.

The shape is conical, or truncated conical depending on the workshop, sometimes with reliefs that will give the cake its characteristic spikes. The dimensions vary according to the desired cake size—a mold for a family cake is often about fifty centimeters high.

Stainless steel is not a default choice. It is a technical choice. It withstands the intense flame of a wood fire without flinching, does not deform, does not crack, and distributes heat evenly over the entire surface of the cake. Its smooth and non-porous surface also guarantees impeccable hygiene, without transfer of flavors between bakings, and clean demolding.


The making of a spit cake mold

Making a spit cake mold is a craft in itself. The stainless steel must be chosen carefully: sufficient thickness for strength, food grade quality for baking, and a careful finish to facilitate demolding.

The stainless steel sheet is hand-shaped, rolled, then welded to obtain the characteristic conical silhouette. The welds are then ground and polished to leave no roughness. The work requires precision and experience: a poorly proportioned, poorly centered, or poorly welded mold will result in an irregular cake.

Well-maintained, a stainless steel mold can last for decades, even passing from generation to generation. Some workshops still use molds crafted over fifty years ago, which are still in service.


More than a dessert, a complete artisanal object

The spit cake is, in its own way, a complete artisanal object. From the mold to the preservation, including the baking and the ingredients, each step embodies a specific know-how. Every detail counts. Every shortcut compromises the final quality.

It is this continuity, this overall coherence, that one finds in every bite of a real traditional spit cake. And this is what always justifies the choice of craftsmanship.
